- Get 4 large free-range eggs
- Make ready Bowl water and ice
- Get 275 g sausage meat
- Make ready 1 tsp dried thyme
- Make ready 1 tsp dried parsley
- Make ready 1 spring onion, finely chopped
- Get to taste salt and pepper
- Get 125 g plain flour
- Prepare 1 egg, beaten
- Make ready 125 g breadcrumbs
- Prepare veg oil for frying
Steps to make Scotch Eggs:
- Boil the eggs! Place them in a pan of boiling water for 3 minutes. Feel free to cook them longer or shorter if you enjoy a runny egg or not! Take them out of the water and put them directly into a bowl of cold ice water. Once cool, peel them and place them aside.
- Mix the sausage meat with the thyme, parsley and onion. Season with salt and pepper. Divide the meat into four sections.
- Place the flour on a plate, put the beaten egg in a bowl, and place the breadcrumbs on a plate.
- Dip the boiled egg into flour, covering completely. Wrap it in the sausage meat. Do this by flattening the sausage meat and slowly working it around the egg - be careful not to squeeze to hard!
- Dip this sausage meat covered egg into the beaten egg, rolling to completely cover it. Then dip it into the breadcrumbs and completely cover.
- Repeat steps 3-5 for all boiled eggs!
- Heat the oil in a deep heavy-bottom pan. To test if it is warm enough, throw a single breadcrumb into the oil and see if it sizzles and browns. If so, its ready! (and HOT, be careful :D)
- Place each scotch egg into the oil and fry so that it is brown and crispy on all edges - should take about 2-3minutes of continuously rotating the scotch egg. Then turn the heat down on the pan, and let it sit and fry for another 8 or so minutes, or until the whole scotch golden and crisp and the sausage meat is completely cooked.
