We cook okra in various ways and this is one of the delicious ways. Vendakkai Kara Kulambu/Kuzhambu is a simple & delicious curry prepared in South Indian Household using Bhindi/Okra.

- Make ready 300 g ladies finger
- Get 2 tbspn oil
- Take 1 onion (chopped)
- Take 1 tomato (chopped)
- Make ready 1 green chilli (slit)
- Prepare 10 cloves garlic
- Make ready Tempering
- Get 5 tbspn gingely oil
- Prepare 1/2 tsp fenugreek seeds
- Take 1 tsp mustard seeds
- Get 1/2 tsp urad dal
- Make ready 2 spring curry leaves
- Get To grind
- Make ready 1 big onion
- Get 2 tomato
- Take 1 tsp cumin/jeera seeds
- Get Spices
- Get 1 tbspn red chilli powder
- Get 1/2 tsp Turmeric powder
- Take 2 tsp coriander powder
- Take 2 tsp mixed masala powder/ kuzhambu podi
- Make ready To soak
- Prepare Lemon size tamarind
- Make ready 2 cups water
- Make ready 1 tsp Jaggery
Cut the tip and tail and discard it. Vendakkai AKA Okra/ bhendi is one of the veggie I love to eat,especially this recipe I learnt from my MIL is so yummy with sambar rice. She in turn got special tips for this recipe from my FIL ๐. That is to fry ladies finger in generous oil and the masala has to be roasted.
Instructions to make Okra/Ladiesfinger/Vendaka Kara kulzhambu:
- Soak tamarind in water. Take the ingredients to grind in a blender and make a paste.
- Heat 2 tbspn oil in a pan, add ladiesfinger and roast for 5 minutes. Keep aside.
- In the same pan heat gingely oil, add fenugreek seeds, mustard seeds and urad dal.
- After mustard cracks add garlic, green chilli,curry leaves and onion. Saute till golden brown.
- Next add tomatoes and stir till it's mushy and then add the ground paste. Saute till raw smell disappears.
- Now add all the spices: turmeric, red chilli, coriander and mixed masala powders. Saute till oil separates from the sides.
- Extract the tamarind pulp strain and add to the kulzhambu. Add salt, cover and cook for 10 minutes.
- When it starts boiling add the ladies finger. Boil for 5 minutes and finally add jaggery. Mix well.
