- In a pot, heat 2 tbsp cooking oil. Add the cumin seeds. Stir it for a moment until the aroma is out.
- Add the chopped onions, stir it until clear in colour or the raw aroma is out.
- Add the grated ginger and sliced chilis.
- Add the chopped tomatoes into it. Stir fry it until the tomatoes are soft. Keep stirring it otherwise it could get burned, add dash of water or oil to prevent it.
- Add the turmeric powder, coriander powder, chili powder, salt, black pepper powder.
- Stir fry it. Add the sliced ladies finger, stir fry it for 3-4 minutes (if you like it soft, you may stir fry it longer). I love the lady fingers crunchy.
- Add the cooked basmati rice. Mix it well together with the mixture of lady fingers and tomatoes.
- Give a taste and add some salt to adjust the taste if it is required.
- Switch off the heat and transfer it to a plate, give a garnish of raisin, cashew nuts.
- Enjoy the fusion fried rice.
