- Prepare 1 cup Refined flour
- Get 1/2 cup Semolina
- Prepare 1/4 teaspoon Baking Soda

- Get 8 Dry Papdi
- Prepare 1 cup Fresh curd (whipped)

- Take 1/4 cup Tomato Ketchup
- Get 2 tsp Roasted Cumin Powder
- Take 1 tsp Red chili powder
- Prepare 1 tsp Chaat Masala
- Prepare 1 tsp Black salt
- Get Salt - as required
- Get 1 tsp Finely chopped green chillies
- Prepare 1 tbsp Finely chopped coriander leaves
Steps to make Raj Kachori:
- First of all mix flour, semolina and baking soda.
- Then knead it with the help of water.
- The dough should be like poori dough.
- After kneading the dough, mash it well, so that it becomes very soft.
- Now put oil in a heavy bottom pan and heat it.
- Make large dough balls.
- After this, roll big pooris from the dough.
- After rolling, put the poori in hot oil and reduce the flame to medium.
- Press the puri with a spoon, so that it puffs well.
- Fry the puris till they turn golden brown and crisp.
- After frying all the pooris, keep the pooris on the tissue paper, so that their excess oil is removed.
- Cut small pieces of boiled potatoes and add boiled white peas.
- Now add 1/3 of curd, salt, chaat masala, red chili powder, tamarind chutney and green chutney to it.
- Break the papdi into small pieces and add a little sugar to the beaten curd.
- Carefully break off the thin surface of the kachori and place it on a serving plate.
- Now add boiled potato, pea mixture and broken papdi inside the kachori.
- Now pour curd, green chutney, tamarind sweet tomato ketchup.
- Sprinkle sev bhujia, roasted cumin powder, chaat masala, black salt, red chili powder over the kachori.
- Add chopped chilli and chopped coriander leaves and serve.
- Enjoy tasty Shahi Raj kachori.
