- Take 1 cup maida / plain flour
- Get 1 tsp rava

- Prepare 1 cup fresh matar /peas or frozen peas/matar

- Prepare 1/2 tsp turmeric powder
- Take 1/2 tsp red chilli powder
- Take 1/4 tsp garam masala
- Take 1/2 tsp coriander powder
- Prepare to taste Salt
- Make ready 1/4 tsp fennel seed/sauf
- Prepare 2 tbsp finely chopped coriander
- Make ready 1/4 tsp amchur powder
- Get 1 pinch hing
Steps to make Matar Kachori:
- Firstly, in a small blender take peas, ginger and chilli. Blend it and make a rough paste.
- In a kadhai, take oil and add jeera,sauf and Hing. Add blended peas paste and saute well.
- After 3-4 mins add turmeric powder, salt and other spices and mix well.
- Cook till the paste dries. Add 2 pinch of sugar for taste and finally add coriander (chopped) and keep aside.
- Now, for dough, take a bowl and rava & maida add oil 3 tsp, salt, sugar and knead it well.
- Make smooth dough. Knead it at least 5 mins. Add 1 tsp oil and again knead it for 2 mins.keep it aside for 10 mins.
- After that take small portion of dough, roll it and take 1 tbsp of peas stuffing and add it in the rolled dough. make balls and press it from the center to form kachoris.
- Heat oil in maximum temperature. And deep fry the kachoris, fry it golden brown and crispy.
- And your delicious hot spicy Matar kachoris are ready to serve.
- Serve it with fried green chillies and imli chutney or any chutney of your choice.
