  7. Make ready 100 g red split lentils, washed

  1. Dice the onion, celery, carrots
  2. Chop the chilli
  3. Add the oil to a large point and when hot, cook the onions until softened, around 4 mins on a medium heat, careful not to burn them.
  4. After 4 minutes, add the celery carrot and chicken and cook for a further 5 mins.
  5. Add the chicken stock and bring to the boil. Add the the garlic salt, onion salt, bay leaves, thyme or whatever herbs you like fresh or dried and season to taste.
  6. Add the lentils and simmer on a low heat for 15 mins. Then add the cooked hicken and simmer for another 10 mins.
  7. Serve with freshly made bread but it's just as satisfying on its own!
