  1. Heat pan with 2 tbls of olive oil on med high heat. Add chicken, season with salt and pepper. Brown, appx 5 minutes. Remove from pan
  2. Add another tbls of olive oil to pan. Then add onion with a pinch of salt, saute till almost translucent, appx 2-3 minutes.
  3. Add peppers, garlic, jalapeno. Saute 2 minutes.
  4. Add chicken, tomatoes and chicken broth.
  5. Turn heat to med low and cook for 20 minutes with lid on.
  6. Turn heat to low, lid off, and let reduce for 10 minutes. Adjust seasoning.
  7. Serve over rice, with flour tortillas. Add a dollop of sour cream and/or guacamole.
  8. Enjoy!

Olive Oil - Vegetable, avocado or coconut oil work as well. Onions - Brown, white or red onions, diced Bell Peppers - Diced. You can use a combination of green and red bell peppers as I did or any other color or combination of.
